Wassail is a tradition that can be a new holiday punch recipe for many households. In old England, carolers went out to the orchard and offered the trees wassail to ensure a good harvest for the following year. Make wassail in a large kettle with two cans frozen orange juice, 1 can lemonade, 2 quarts apple juice or cider, 5 cups water and 1 1/4 pound sugar brought to a simmer. Include 1/4 pound white raisins, 5 whole cinnamon sticks and an orange with a few teaspoons of cloves inserted in the rind. Swedish Glogg is another traditional holiday punch recipe. The word glogg means glow and it comes from the flame created by burning sugar over top of the punch. Make the punch in a kettle filled with one bottle of dry red wine. Insert 2 whole cloves into each of 4 dried figs and add them along with 10 cardamom seeds, 2 cinnamon sticks, the peel of one small orange, 1 cup raisins and 1 cup blanched slivered almonds. Cover the kettle and simmer until it just starts to boil, remove from heat and take the kettle away from the stove. Place 1/2 pound sugar cubes in a metal strainer with a long metal handle. Wear a full oven mitt to protect the skin and dip the sugar cubes in the glogg just to moisten them. Light the cubes with a match and hold the strainer over the punch to allow the melting sugar to drip into the liquid until it is all gone. Cover the kettle with the lid to put out the flame if it is still burning, then strain and cool. Heat the glogg up right before serving, but never let it boil.
