Prep Time: 30 minutes Servings: 6 Ingredients:
• 12 red, round new potatoes
• 4 tablespoons extra virgin olive oil
• 2 teaspoons kosher salt, or to taste
• 1 teaspoon black pepper, or to taste
• 2 sprigs fresh rosemary, finely chopped
• 1 clove of garlic, finely chopped
Directions:
1. Bring a large pot of salted water to a roiling boil. Place potatoes in pot and cook until tender.
2. Drizzle 3 tablespoons of extra virgin olive oil generously in a sheet pan. Place the cooked, tender potatoes on the pan, leaving room between each potato.
3. Using a potato masher, gently press down on each potato. It should slightly mash and become “squashed” looking. You want the skin to break, and the potato to slightly spread.
4. brush the tops of the potatoes with the remaining 1 tablespoon of olive oil. Sprinkle the crushed garlic and rosemary over the tops, along with the kosher salt and pepper.
5. Bake in a preheated 450-degree oven for 25-30 minutes.
6. Remove and serve.

• 2 pounds frozen Brussels sprouts, thawed and cut in half
• 3 teaspoons extra virgin olive oil
• 1 teaspoon garlic salt
• 1/2 teaspoon fresh, cracked pepper
• 1/2 teaspoon sugar
• 2 cloves finely minced, fresh garlic
Directions:
1. Preheat oven to 375-degrees.
2. Mix Brussels sprouts, extra virgin olive oil, garlic salt, pepper and sugar. Mix well, ensuring each Brussels sprout is coated in oil and spices.
3. Pour into a 9×9 baking pan. Sprinkle minced garlic over the top of the Brussels sprouts.
4. Bake in oven for 45 minutes, or until Brussels sprouts have turned a dark, golden brown.
